Recently, the West Central MN CEO entrepreneurs had the opportunity to visit Mi Rancho Viejo in Kerkhoven, MN to hear the story behind a business built on family, authentic food, and the courage to follow a dream.
What started with a passion for sharing traditional flavors and recipes has grown into something special. With the support of friends and family, that dream turned into a storefront restaurant, and has continued to expand with food trucks that can now be found at community events throughout the region.
Our students learned that entrepreneurship isn’t just about opening a business — it’s about taking a chance on your dream, honoring your roots, and building something that brings people together.
