On Tuesday, Spoon River CEO students welcomed Megan Gilstrap from the Fulton County Health Department as a guest speaker, hosted at the Donaldson Center in Canton, IL. As Programs Manager for Environmental Health, Megan shared real-world experiences from her career, eye-opening insights into environmental health, and important considerations for anyone dreaming of starting a food-related business.

With many food-based ventures already in the works for our end-of-year Trade Show, this conversation couldn’t have come at a better time. Huge thanks to Megan for being such a fantastic resource and for volunteering to equip our students with knowledge they’ll use in CEO and beyond.
